One such creative soul is cake maker extraordinaire Odette Falzon, who lives at Lake Cathie.

Mrs Falzon moved from Sydney to the Hastings in 2015, she has been making cakes as a hobby for around eight years.

"It has very much been an off and on calling. I've learnt a lot from Youtube and done little courses here or there," she said.

"I've worked in boutiques, done hair-dressing and driven small trucks. This was more of a hobby which I am now really getting into and putting myself out there because I love doing it."

Each cake creation can take up to three days to complete and weeks of preparation. Mrs Falzon precisely fashions, bakes and decorates each cake in a specialised 'cake studio' at her home.

Mrs Falzon said her favourites are often cakes made in a letter shaped and painstakingly decorated with hand-cut flowers shaped from sugar paste.

"My best creative time is when I go for a walk every morning, that's where I get my ideas," she said.

Mrs Falzon originally began making cakes and cookies for family and friends. During the recent period of coronavirus isolation she launched Odette's Cakes & Cookies to provide custom creations to the public.
